Once all the potatoes and onion have been ground up and mixed together in a bowl, add the eggs, matzo meal, and salt.

In a mixing bowl, combine the eggs, salt and pepper, onion, bread crumbs or matzo meal, and the chopped parsley.

Fold in the eggplant, adding more bread crumbs or matzo meal, if needed to hold together.
